Water Spinach (Morning Glory)

Water Spinach, also known as “Kang Kong” or “Morning Glory”, is a leafy green vegetable that grows in water or moist soil. It belongs to the Ipomoea aquatica species and is native to Southeast Asia but is also cultivated in other tropical and subtropical regions around the world.
Water Spinach has long, hollow stems and elongated leaves with pointed ends. The leaves are glossy and dark green, and the stems are tender and crisp. It has a mild, slightly sweet flavor and a crunchy texture, similar to spinach or mild Swiss chard.
Water Spinach is highly nutritious, rich in vitamins A, C, and K, as well as iron, calcium, and antioxidants. It’s low in calories and carbohydrates but high in fiber, making it a healthy addition to various dishes.
In Asian cuisine, water spinach is commonly stir-fried, sautéed, or used in soups and stir-fry dishes. It pairs well with garlic, ginger, chili peppers, and soy sauce, among other seasonings. Water spinach is also popular in salads, curries, and noodle dishes.
