Baby Pak Choi, sometimes also called “Baby Bok Choy,” refers to a smaller, more delicate version of the standard Pak Choi. It’s harvested when the plants are still young, typically around 4 to 6 inches tall, and the leaves and stems are tender and sweet.
Baby Pak Choi has all the same characteristics as regular Pak Choi but in a more petite form. It has dark green leaves and crisp, pale green stems. The flavor is mild and slightly sweet, with a hint of peppery notes.
